Tomatoes are finally starting to ripen! Yay! So I'm giving you a favorite recipe today: Tomato Cucumber Salad. This is a Paula Deen recipe, but I'm pretty sure my Grandma Rozen used to make something like this. Again, you just make this recipe your own by throwing in what you like and leaving out what you don't. It's super easy and yummy.
Here's what you'll need:
A Tomato (In the winter I grab the grape tomatoes at the super and half them.)
A Cucumber or Pickles (I prefer fresh pickles cuz of the crunch factor)
Onion--Paula's recipe calls for sweet onion but I've used green, purple and yellow too.
Olive Oil
Cider Vinegar (you could also use balsemic or reg for a different taste)
Salt and Pepper
Stir in's: Paula recommends parsley, I like fresh basil in mine, dill is also lovely.
So you dice up your cukes, tomatoes and onion to the size you want. I like em small so I get a little of everything on my fork:
Put it all in a bowl. Now toss in whatever add in's you want. Here's my lovely fresh basil.
Now add in 1 tsp of olive oil and 1 tsp of cider vinegar. Use more or less according to taste. I honestly don't measure this out. I just grab a regular spoon from my drawer and pour in equal amounts.
Salt and Pepper to taste and your done. I like to use big old Kosher salt on mine and fresh pepper. Yummy. If you let it set it will get less crunchy but the flavors will soak in so it's still good. However, I rarely have any leftover to put in the fridge. This is a good, simple salad.
